How do you make dinner without fancy tools?

I'm still getting comfortable with cooking. It got easier when I stopped treating every attempt like a final exam. After eight attempts, keeping the setup simple seems to help me actually follow through. If prep takes less than eight minutes, I'm much more likely to keep doing it. Most people skip the boring setup, but that's what makes a cooking habit survive a busy week.

Focus on heat and timing before changing ingredients. Salt early, taste before adding more acid or sweetness, and note your oven times—every kitchen lies a little. Come back with what happened; the details will help with the next attempt.

If it's dough-related, weigh the flour and watch the texture more than the clock. Humidity changes the result a surprising amount.

this sounds sensible, though I'd need to test it myself. A boring checklist might help.

Being kinder to yourself while learning is what sold me.
