What mistake taught you the most about dinner when life is busy?

I've noticed that if prep takes less than five minutes, I'm much more likely to follow through. I tried keeping things simple with a friend in Berlin, and the social part mattered more than having a perfect plan. Nine attempts isn't much to go on, but that pattern keeps coming up. What did you learn the hard way about busy-night dinners?

If it's dough-related, weigh the flour and watch the texture more than the clock. Humidity changes the result a surprising amount.

this is useful for some cases, but terrible advice if the stakes are high. The ambitious part is easy to underestimate

Control heat and timing before changing ingredients. Salt early, taste before adding more acid or sweetness, and note your oven times because every kitchen lies a little. Don't try to optimize everything before you've seen what happens.

For meal prep, cook components rather than full meals: grain, protein, sauce, crunchy topping. It stays less sad by Thursday.
